Sweet Sev is a tasty, sugary version of Sev made by caramelizing sev.
Ingredients
1/2 cup gram flour
1/8 cup rice flour / idiyappam flour
2 tbsp hot oil
oil to deep fry
salt to taste
To make sugar syrup
1/2 cup sugar
1/4 cup water
1/8 tsp cardamom powder
a pinch dry ginger powder
Method
In a mixing bowl add gram flour, rice flour, salt and mix well.
Now add 1 tbsp hot oil and mix again.
Now add water little by little to form a smooth dough.
Grease the murukku press and fill with dough.
Heat oil and start making shapes and fry them.
Make sure it gets cooked evenly on both sides, turn over accordingly. Take it out when the colour is golden brown on both the sides.
Drain in tissue, cool down completely and set aside.
Making Sugar Syrup
Heat sugar and water in a pan.
Add cardamom and dry grinder powder. Sugar will first dissolve then start to thicken up.
Take a drop of syrup and check in a small plate with water. If it gather and form a ball. This is the right consistency. Then switch off the hob.
Making Sweet Sev
Now add the sev to the sugar syrup and toss it well.
Leave it for few minutes. Cool down completely and then store it in an airtight container.
