Appam is a type of pancake, made with fermented rice batter and coconut milk.
Ingredients
- 1 cup rice
- 2 cups fresh or frozen grated coconut
- 3 Tbsp sugar
- 1/2 tsp yeast
- Salt
Method
1.Soak rice and coconut in water for about 6 hours.
2.Check for rice to turn soft.
3.Add in a blender along with sugar and salt and grind properly.
4.Add yeast and blend for another 2 minutes.
5.Let the batter rest in a warm area for the batter to rise or refrigerate overnight.
6.Heat a pan and pour the batter at the centre
7.Twist the pan to get the desired shape, close the lid and cook for about 3 minutes till the ends turn light brown.
8.Serve and enjoy!
