Cashew Murukku is a rich, tasty crunchy snack to be enjoyed at home as an evening tea time snack.
1 cup rice flour
20 whole cashews
1 tbsp ghee
salt to taste
oil to deep fry
Soak the cashews in hot water for at least 15 minutes. Grind it to a fine paste.
In a mixing bowl add rice flour, cashew paste, ghee and required salt and mix well.
Now add water little by little to form a smooth dough.
Grease the murukku press and fill with dough.
Heat oil and start making shapes and fry them.
Make sure it gets cooked evenly on both sides, turn over accordingly. Take it out when the colour is golden brown on both the sides.
Drain in tissue, cool down completely and then store in airtight container.
