Almond Halwa is a rich, melt in the mouth sweet made by simmering almond paste with ghee and saffron.
1/2 cup almonds
1/4 cup + 2 tbsp ghee
1/2 cup + 2 tbsp sugar
10 strands saffron
1/3 cup + 1 tbsp water
Soak almonds in hot water for an hour. Peel off the skin and grind them with 1/3 cup water.
Soak saffron in a tbsp of warm water, set aside.
In a pan add almond paste along with sugar and saffron water.
Keep cooking in low flame. It will start to thicken in few mins.
Add ghee little by little and keep stirring continuously in low flame.
When the ghee starts separating at the sides of the pan, you can switch it off.
For shapes, Cool down for at least 30mins. Then take 2 spoon of halwa and place it on folded parchment paper. Level it and set aside.
