Ingredients
For rice:
1½ cups basmati rice
4–5 cups water
2–3 cloves
2 cardamom pods
1 bay leaf
Salt to taste
For vegetables:
1 cup mixed vegetables (carrot, beans, peas, potato, cauliflower)
1 large onion (thinly sliced)
1 tomato (chopped)
2 tbsp yogurt
1 tbsp ginger-garlic paste
2 green chilies
½ tsp turmeric
1 tsp red chili powder
1 tsp garam masala
1 tsp biryani masala
Salt to taste
For layering:
Fresh coriander leaves
Fresh mint leaves
2 tbsp ghee or oil
A pinch of saffron soaked in warm milk (optional)
Instructions :
1️.Cook the rice
Wash and soak rice for 20–30 minutes
Boil water with whole spices and salt
Add rice and cook until 70–80% done
Drain and set aside
2️.Prepare the vegetable masala
Heat oil or ghee in a pan
Fry sliced onions until golden brown
Add ginger-garlic paste and sauté
Add tomatoes and cook until soft
Add spices, yogurt, and vegetables
Cook until veggies are tender but not mushy
3️.Layer the biryani
In a heavy-bottom pot:
Add a layer of vegetable mixture
Add a layer of rice
Sprinkle mint, coriander, and saffron milk
Repeat layers if needed
4️.Dum cooking (steaming)
Cover tightly with a lid (seal with dough if possible)
Cook on low heat for 15–20 minutes
5️.Serve
Gently mix before serving
Serve hot with raita or salad
